Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter
- 3/4 cup brown sugar
- 1/3 cup white sugar
- 1 1/2 cups smooth peanut butter
- 1 large egg
- 1 large egg yolk
- 7 ounces marshmallow fluff
Directions
Preheat the oven to 350°F (175°C) and line a 9x13 inch pan with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat together the butter, brown sugar, and white sugar until creamy.
Beat in the peanut butter, then mix in the egg and egg yolk until smooth.
With the mixer on low speed, gradually mix the flour mixture into the peanut butter mixture.
Remove about 1 cup of the dough and set aside.
Press the remaining peanut butter dough evenly into the bottom of the lined pan.
Bake for 25 minutes or until the top looks fully set.
Remove from the oven and carefully spread the entire jar of marshmallow fluff over the peanut butter layer.
Pinch off pieces of the reserved peanut butter dough, flatten slightly, and scatter over the marshmallow layer, covering about 80-90%.
Bake for 10 more minutes or until the peanut butter pieces are set.
Cool at room temperature for at least 1 hour before slicing.
